Where it comes from

Amchur is produced from unripe green mangoes, typically fruit that falls or is removed during natural thinning before full ripening, sourced from India's major mango-growing regions. Because it uses unripe fruit specifically, amchur production is somewhat less tied to the peak mango season than ripe-fruit mango powder, giving it a broader raw-material availability window.

How it's processed

Green mango is sliced and sun-dried, then milled into a fine powder that retains its sharp, sour, cooling character.
