Garlic is one of the few dehydrated spice ingredients supplied across genuinely distinct forms rather than just a range of mesh sizes — dried whole cloves, minced pieces, flakes, granules and fine powder are all real, commercially available formats, each suited to a different application. Buyers who default to "garlic powder" without considering whether a coarser or whole-piece format would actually serve their product better are frequently leaving flavour and texture performance on the table.

Where it comes from

India is a major global garlic producer, with Madhya Pradesh, Gujarat, Rajasthan and Uttar Pradesh among the leading growing states. Indian garlic is generally noted for its pungency and strong, true garlic character, which is a large part of why Indian dehydrated garlic performs well in export markets that expect a genuinely sharp, savoury garlic note rather than a muted one.

How it's processed

Garlic is dehydrated to lock in its sharp flavour, then processed into one of five distinct formats: whole dried cloves for buyers who rehydrate or grind in-house, minced pieces, flakes for visible garnish and texture applications, granules for a mid-range particle size, and fine powder for instant, uniform dispersion. Every format starts from the same dried, high-pungency raw material — the difference is entirely in how far it is broken down before packing.

Notes for formulators

Matching format to application pays off directly here. A garnish or topping application usually wants flakes or minced pieces that read visually as real garlic; a sauce, marinade or seasoning blend wants fine powder for clean, gritless dispersion; and a buyer who rehydrates or further processes in-house may prefer whole dried cloves for maximum flexibility. Requesting the wrong format is a common and easily avoidable mistake — ask your supplier which of the five formats best suits your specific process before defaulting to standard fine powder.
