Lemon Powder: capturing citrus brightness in a dry, dosable form

Lemon's bright, zesty acidity is one of the most universally recognised flavours in food and beverage formulation, and also one of the more awkward to work with in a dry-blend format using fresh juice or liquid concentrate — liquid ingredients complicate dry-mix production, introduce moisture where formulators specifically don't want it, and are harder to dose with precision at scale. Where it comes from

Lemon (Citrus limon) is grown across several Indian states, with cultivation concentrated in regions suited to citrus production.
