Mango is called the king of fruits in India for good reason, and for many buyers it is the single most important tropical flavour in their range. The challenge is that great mango flavour is tied to peak ripeness and a short season, neither of which fits a year-round production plan. Where it comes from

India grows an extraordinary range of mango varieties, and the choice of variety shapes the powder. Mango powder is most often spray-dried into a free-flowing form for beverages and premixes, or freeze-dried where the deepest colour and the freshest aroma are wanted for premium products. The pulp from ripe fruit is processed promptly to protect its character, then dried and milled to a smooth, soluble powder. Every lot is graded, tested for moisture and microbial counts, passed through metal detection and given a final check before sealing.

Alphonso delivers a rich, perfumed, almost floral character and a deep colour that suits premium and label-led products, while Totapuri gives a brighter, tangier profile and a higher yield that works beautifully in mainstream beverages. Colour standardisation is the other request we hear most. Mango's golden-orange shade can vary with variety and ripeness, so if your beverage or dairy product depends on a consistent appearance, fix the colour target in the spec and we will hold it across batches. In drinks, the powder also contributes a natural cloud and body that reinforces the perception of "real fruit", which is harder to achieve with flavourings alone.

On dosing, spray-dried grades carrying a small amount of maltodextrin disperse and flow more easily but dilute flavour slightly, whereas pure freeze-dried powder is more intense and more delicate; the right choice depends on whether solubility or maximum flavour matters more for your line.
